Lentil soup

Vegetarian power food

Ingredients:

  • 250 gr. lentils
  • 1 finely chopped onion
  • 1 finely chopped garlic clove
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 teaspoon oregano
  • olive oil
  • salt & pepper
  • white wine vinegar

Preparation:

To keep this dish quick and easy, I do not week the lentils. Though, it is very important to inspect the lentils on any stones. Fill a large pot with water and add the lentils. Add the onion, garlic, bay leaf, oregano, salt, pepper and a good dash of olive oil. Add the tomato paste as soon as the soup boils. The soup is ready once the lentils are cooked.

It might sound strange, but adding a little white wine vinegar to the soup makes this dish even more delicious.
