Ingredients:
- 250 gr. lentils
- 1 finely chopped onion
- 1 finely chopped garlic clove
- 1 bay leaf
- 1 tablespoon tomato paste
- 1 teaspoon oregano
- olive oil
- salt & pepper
- white wine vinegar
Preparation:
To keep
this dish quick and easy, I do not week the lentils. Though, it is
very important to inspect the lentils on any stones. Fill a large pot
with water and add the lentils. Add the onion, garlic, bay leaf,
oregano, salt, pepper and a good dash of olive oil. Add the tomato
paste as soon as the soup boils. The soup is ready once the lentils
are cooked.
It might
sound strange, but adding a little white wine vinegar to the soup
makes this dish even more delicious.
