Beef with okras

This is typical weekend food.
It takes hours, but it’s so good.
Ingredients:

-         400 gr. (frozen) okra’s
-         1 big onion
-         2 cloves of garlic
-         5 tablespoons olive oil
-         1 kilo beef
-         2 tins peeled tomatoes
-         (ground) black pepper
-         salt
-         1 bay leaf
-         cinnamon stick
-         6 pimento balls
-         1 teaspoon honey
-         vinegar

Preparation:
Peel and finely chop the onion. Cut the beef in pieces. Put the olive oil in a big casserole and fry the onion on a low heat. When the onion has become glassy add the beef. Fry this again at a low heat and meanwhile add pepper, salt and the chopped garlic. Move the casserole to the smallest cooker and put it on a low heat. Next you need to add water untill the meat is covered.   Add the bay leaf, cinnamon stick and the pimento balls. Let the beef cook for about 3 hours. Check the meat frequently and add some water if necessary.

In the meanwhile clean the okra’s. Cut the ends, but be careful to not damage the okra’s. A damaged okra can become slimy. Do not chop the okra’s. Put the okra’s in a bowl and cover them with vinger. Wash them off after 30 minutes.

After the meat has cooked for about 3 hours add the peeled tomatoes and the okra’s. Let this cook slowly for about 30 minutes. Because of the tomatoes the saus can become a little sour. If so, add some honey into it.

Enjoy your meal !! J
