Courgette Pie

This recepy is so simple and so delicious.
This is 1 of the many classic Greek dishes and this is my way of making it.

Ingredients:

-          filo pastry 
-          3 large grated courgettes
-          5 – 6 finely chopped spring onions
-          750 gr. feta
-          4 beaten eggs
-          4 tablespoons parsley
-          3 tablespoons olive oil + to grease a baking dish
-          3 tablespoons liquid butter
-          (ground) black pepper
-          add some salt if the feta is not to salty


Preparation:

Put the olive oil in a frying pan and fry the spring onions and parsley for about 2 minutes.
Put the courgettes, feta, eggs, pepper and the onion mixture in a bowl and mix everything up.
Take a baking dish and grease it. Cover the bottom and the sides of the dish with the pastry. Put the courgette mixture in the dish and cover it with filo pastry.
Bake the pie in a preheated oven at 180 degrees Celsius for about 35 minutes. The pastry needs to get crispy.
