Very simple and at the same
time special because of its taste.
Ingredients:
- 500 gr. Penne rigate
- 2 chicken filets, in cubes
- 3 peppers, roughly chopped
- 4-5 table spoons of olive
oil
- 2 table spoons of ground
cumin
- bag of mixed salad
- salt & pepper
- 2 table spoons of mayonnaise
Preparation:
Cook the penne according to the preparation method on the
packaging.
Heat the oil in a frying pan and add the chicken and the
cumin. Let the chicken brown a little and then add the peppers. Turn off the
heat when the ingredients are cooked.
Put the pasta in a bowl and add the chicken and the
peppers including the oil that’s left in the pan. Put in the mixed salad and
add the mayonnaise and mix everything together.

I
ate this salad for the first time at my sisters’ place in Patras. I was
immediately amazed by the flavor and I have been making this salad ever
since.My version today is an inspiration of my sisters' recipe. I
realize that cumin is not a very usual taste. If you like you can use one
tablespoon instead of two. I
prefer eating this salad still a little bit warm.
