Rice with finely chopped vegetables


My aunt is the inspiration for this delicious recipe.
Use vegetable stock for a vegetarian dish.

Ingredients:

  • 1 onion
  • 1 garlic clove
  • 1 carrot
  • 1 bunch of parsley
  • 8 table spoons olive oil
  • 500 gr. Parboiled rice
  • 500 ml water
  • 1 cube of chicken stock
  • salt and pepper

Preparation:

Chop the onion, garlic, carrot and parsley very finely. Preferably with a food processor. Heat six tablespoons of olive oil and add the finely chopped vegetables. Fry the vegetables on a low heat. Do not let the vegetables burn. Add after 2 minutes the rice. Fry the rice until they turn glazy. Pour the water over the rice and crumble the stock cube over it. Put the lid on the pan. Stir the rice occasionally until it is cooked. Add salt and pepper to taste. In general, the rice is cooked as soon as all the water is absorbed. Finally, drizzle the remaining olive oil over the rice.
